Eat Yourself Whole

In our house, when things get hectic, I often announce it’s time to bake!  My 3 year old loves to cook and there’s a lovely sense of order that comes from methodically working through a recipe together.  We have recently embarked on a whole foods philosophy in our house, not to be virtuous, but out of genuine interest in seeing if it affects my son’s moods.  He’s a busy 3 year old, and a fussy eater (though I’d never tell him that), so the hunger meltdowns are common in our house.  We are 4 weeks in and I am convinced we have a more even-keeled child on our hands so I’m really excited to see where this journey takes us.  Here is a great little, super easy, recipe to try when something sweet is in order.

Date & Cashew Bars

1 ½ cups raw cashews

8 medjool dates (pits removed)

1 tsp vanilla extract

1 tbs coconut oil or water

Grind cashews in a food processor until fine, add remaining ingredients and pulse until a dough forms.  Press mixture into a flattened log shape on a parchment lined tray.  Refrigerate until firm, then slice into bars.  
Store in an airtight container in the fridge for up to a week.  Enjoy!


    Beware – they are addictive!! Mix and match with whatever nuts and dried fruits you have on hand. You can also roll them into little balls if you prefer 🙂
